Can earth benders and water benders bend mud?

Both water and earthbenders can bend mud, there is a fight (I forget which episode it is) where Katara and Toph are both bending mud. Minerals inside plants are not in the form of minerals, they’re either in solution, or are incorporated into organic molecules.

Can Waterbenders Bend ice like earthbenders?

Sadly no, as lightning is not a form of water. Lightning redirection was definitely inspired by Waterbending philosophy and techniques, but since lightning is a purified form of fire (The Cold-Blooded Fire, as Iroh so eloquently put it) and not water, only a Firebender can redirect lightning.
