Well., Orochi didn’t change in the end…he changed gradually throughout the series (majorly after the apparent death of him at Sasuke’s hands). He resided in Sasuke’s cursed seal mark (a part of his consciousness)….and then also in Kabuto. Whatever means it was ( not revealed) , but he was always observing Sasuke.

Two reasons, Orochimaru was at his body deadline, he needed Sasuke’s body and he needed it immediately, he was in an extremely weakened state. Second he had trained Sasuke too well, he was extremely powerful and he knew the ins and outs of Orochimaru and his abilities by then, so he was able to defeat him.
