To transfer from Kerbin’s orbit, you will want your Apoapsis to intersect the Mun’s orbit. If you want to reach the Mun on the first swing around, wait until Mun rises just above the horizon. A good rule of thumb is for each 100 km you are above Kerbin, wait another 2 seconds.

When flying it manually, plan your deorbit burn so that the periapsis is just past the landing zone (or for the Mun just slightly in front of it might work as well). Then just land normally and hope for the best, then play around with periapsis height and distance from the target until you can consistently get within some reasonable distance.

How far away from the Space Center can you land without mechjeb?

Closest I’ve managed to get to a specific spot without MechJeb’s auto-land (which really feels like a cheat) was about 500 m away from a stranded crew on the Mun. Felt pretty good about that. Back on Kerbin, I can’t seem to land near the space center at all.
