He couldn’t have created descendants in that timeline. And don’t forget that Link died in OoT so he couldn’t have descendants in the fall timeline either.

Why does Link keep reincarnating?

We know Hylia gave up her mortality to become Zelda in her incarnations, and presumably Demise’s dying words are him giving up his immortality in order to do the same.
