Why do photographers keep their ISO low?

Because all pixels collect some noise, every digital camera runs processing on every image (although with a NEF, or RAW, file that can be changed later) to minimize that noise. They want to keep their ISO low for high quality images (low noise), but also they need a fast enough shutter speed to get a sharp picture.

A minimum setting of ISO 200 indicates the sensor saturates at a certain speed…a speed twice as fast as ISO 100, and four times as fast as ISO 50. Its due to the rate at which the sensor saturates at its “base” sensitivity that the minimum ISO is 200 rather than 100…not because it is simply arbitrarily assigned.
